Ricotta Cream with Spicy Cherries

The perfect ricotta cream with spicy cherries recipe with a picture and simple step-by-step instructions.

  • 190 g Ricotta
  • 20 g Freshly squeezed lemon juice
  • 30 g Sugar
  • 3 Bl. Gelatin
  • 250 g Whipped cream
  • 250 g Frozen sour cherries
  • 130 ml Red wine or cherry juice
  • 80 g Sugar
  • 1 Pc. Cinnamon stick
  • 1 Pc. Clove
  • 1 Pc. Star anise
  • 1 Pc. Cardamom
  1. Bring red wine or cherry juice, sugar and spices to the boil, thicken with a little pudding powder or wheat starch. It should be creamy, then stir in the frozen cherries. It looks lumpy and firm, but the cherries will still give off juice. Stir every now and then.
  2. Soak gelatine in cold water. Mix the ricotta, lemon juice and sugar together and stir until smooth. Squeeze out the gelatine well and mix it with a little ricotta cream in a saucepan. Stir the liquid gelatine into the ricotta cream and then fold in the cream.
  3. Now fill everything into glasses. My layering: cherries, cream, cherries
