- 200 g fresh leaf spinach
- 100 g ricotta
- 50 g Parmesan, grated
- 100 g flour
- salt and pepper
- nutmeg
- 1 tbsp olive oil
- 1 egg(s)

Finely chop the onions, wash and dry the fresh spinach, and chop it as finely as possible. Sauté the onions in a pan until translucent. Transfer the translucent onions to a larger bowl. Add the spinach, ricotta, egg, Parmesan cheese, and flour. Knead the mixture vigorously, season with salt, pepper, and grated nutmeg, and knead until the spices are evenly distributed. Form the mixture into four patties. Fry in a pan with olive oil for about five minutes on each side.
