Ingredients for 4 servings:

  • 4 tbsp flour
  • 1 m.-sized egg(s)
  • Salt
  • possibly water
  • 1 liter meat broth, strong
  • 2 tbsp butter
  • 2 tbsp chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Riebele grated by hand

Riebele: Whisk the egg. Mix the flour and salt thoroughly. Mix everything together and rub it into small crumbs with your hands. Add water only a little at a time if the flour is too difficult to work with. The Riebele should be grated very thoroughly; the smaller the better. When they are ready, simply add them to the boiling meat broth and let them stand for about 5 minutes, but do not boil them any further. Meanwhile, brown the butter. Pour the meat broth and Riebele into a plate, spread the browned butter on top, and finally garnish with some chives.
