Risotto in the Ladin style

Ingredients for 4 servings:

  • 400 g rice (risotto rice)
  • 4 tbsp olive oil
  • 1 liter meat broth
  • 0.1 g saffron
  • 2 onions
  • Salt and pepper, freshly ground
  • 200 ml white wine

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

A South Tyrolean specialty

Peel the onions and dice them into small cubes. Heat the oil in a pan and sauté the onions until translucent. Add the rice and fry until translucent. Deglaze with the wine. Add the meat broth and simmer for 25 minutes over low heat. Season with saffron, salt, and pepper, and bring back to a boil briefly.
