Risotto with peas

Ingredients for 4 servings:

  • 200 g rice pudding
  • 1 tbsp oil
  • 2 tbsp butter
  • 1 small onion(s), diced
  • 150 g ham or bacon, diced
  • 450 g peas, frozen or fresh
  • 750 ml meat broth
  • 3 tbsp Parmesan, freshly grated
  • salt and pepper
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Risi e Bisi

Heat oil and a little butter. Briefly fry the onions and ham, then add the rice. Toast the rice while stirring until translucent. Then add the peas and gradually add the stock. Only add more stock once the stock has been absorbed. Cook for about 15-20 minutes, then taste. Season to taste, stir in the butter and Parmesan cheese, and serve immediately, sprinkled with parsley.
