Roast beef and asparagus pan

Ingredients for 3 servings:

  • 450 g roast beef
  • 500 g asparagus, green
  • 1 large bell pepper(s), red
  • 1 large onion(s)
  • 2 garlic cloves
  • 1 ½ tsp coconut oil
  • 1 tbsp curry powder
  • 4 tbsp soy sauce
  • 250 ml cooking cream, 7% fat

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the roast beef into strips. Wash the asparagus, trim off the woody ends, and cut into pieces. Dice the bell pepper and onion. Heat the coconut oil in a large pan or wok. Sear the roast beef strips for about 2-3 minutes, then remove. Stir-fry the asparagus pieces in the same pan for about 5 minutes, or fry them while stirring constantly. Add the diced bell pepper and onion and fry for 5 minutes. Crush the garlic and sprinkle with curry powder. Stir-fry for 2 minutes. Deglaze with the soy sauce and pour in the cooking cream. Add the meat and simmer on low heat for 5 minutes. Per serving: approx. 377 kcal, 6.5 g carbs, 15.5 g fat, and 41.5 g protein.
