Roast potatoes

Ingredients for 6 servings:

  • 600 g potatoes, small, triplets
  • Salt
  • 20 g butter
  • 2 tbsp oil
  • 1 bay leaf
  • 1 tsp sea salt (fleur de sel)
  • 2 tbsp breadcrumbs

The best thing a potato can become.

Cook the potatoes with their skins on for about 20 minutes in boiling salted water or in a steamer over a pan. Then let them steam off and peel them while still warm. Heat the butter and oil in a large pan. The oil protects the butter from burning. Fry the potatoes with the bay leaf over high heat until golden brown on all sides. Add the fleur de sel and breadcrumbs and mix well. Continue frying the potatoes for a further 2-3 minutes, turning occasionally. Tip: If you like, you can replace the bay leaf with another flavoring or use additional spices. Paprika, for example, works very well. Variation: Use sesame oil for frying. Season the potatoes with finely chopped garlic and 1/2 teaspoon each of cumin and coriander. If you like, omit the bay leaf. Before serving, mix in a handful of finely chopped coriander leaves and season with salt and cayenne pepper. This is the oriental roasted potato.
