Roast Wild Boar in Blueberry Sauce

The perfect roast wild boar in blueberry sauce recipe with a picture and simple step-by-step instructions.

  • 1 kg Wild boar meat
  • 2 Pc. Onions
  • 2 Pc. Carrots
  • Ground ginger
  • Salt flavored
  • Black pepper
  • 500 ml Meatsoup
  • Clarified butter
  • 100 ml Cream
  • 1 tbsp Food starch
  • 100 ml Blueberries (fresh or frozen)
  • 2 tbsp Honey
  1. Season the roast with salt, pepper and ginger and fry all over in the clarified butter. Peel the carrots and onions and cut into slices or rings. Add to the meat and fry briefly. Then add the honey and pour the broth on top. Cover and simmer on low heat for about 90 minutes. Remove the meat and keep it warm and drain the broth.
  2. For the sauce, put the poured broth with the cream in a saucepan and bring to the boil briefly. Season to taste with salt, pepper and ginger. Mix the cornstarch with a little cold water and use it to thicken the sauce. Then add the blueberries and heat them briefly.
  3. Slice the meat and pour the sauce over it
