Ingredients for 1 servings:

  • ⅛ liter of water
  • ½ tsp cinnamon
  • 1 packet of vanilla sugar
  • 0.2 kg sugar
  • 0.2 kg almond(s), whole, unpeeled

Bring the water, sugar, vanilla sugar, and cinnamon to a boil in a deep pan over high heat. Add the almonds and reduce the liquid while stirring. After a few minutes, when the water has evaporated, the sugar will return to a sandy consistency. Stir the almonds continuously with a wooden spoon. Let the sugar caramelize and then toss the almonds in it while stirring. Once the almonds are shiny, spoon them onto a baking sheet lined with parchment paper and spread them apart with two forks so they don’t stick together. You’ll have to experiment a bit with the temperature. I’ve found that the almonds don’t shine as beautifully and remain a bit sugary and dull if you reduce the temperature. Let them cool and enjoy!
