Zucchini skewers à la Gabi

Ingredients for 4 servings:

  • 1 large zucchini
  • 1 handful of Italian herbs (oregano, thyme, basil), finely chopped
  • 125 g buffalo mozzarella, cut into thin slices
  • 6 tomatoes, dried, possibly 8, thinly sliced
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for 6 – 8 skewers

Cut the zucchini lengthwise into 6-8 slices using a vegetable peeler and arrange them side by side on a platter. Drizzle with a little olive oil and sprinkle with the herbs. Distribute the mozzarella and tomatoes over the zucchini slices. Carefully roll up from bottom to top and thread onto wooden skewers. Heat a little olive oil in a grill pan and cook the skewers on both sides until lightly browned and the cheese has melted. Tip: The skewers can also be grilled.
