Roasted green spelt soup

Ingredients for 4 servings:

  • 40 g green spelt, ground
  • 40 g margarine
  • 1 ¼ liters vegetable broth
  • 1 egg yolk
  • Cream as desired
  • salt and pepper
  • Maggi

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Roast the green spelt in hot fat until light yellow and nutty, then deglaze with broth. Simmer gently for 5-10 minutes, then remove from heat and blend with egg yolk and cream. Season to taste with salt, pepper, and Maggi.
