Roasted honey rhubarb

Ingredients for 4 servings:

  • 500 g rhubarb, peeled
  • 1 dl honey
  • 4 tbsp orange juice
  • 4 tbsp orange zest

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the rhubarb into approximately 1 cm pieces and mix well with the remaining ingredients. Transfer everything to an ovenproof dish and steam in an oven preheated to 180°C for about 20 minutes, until the rhubarb is soft, stirring 2-3 times. Then, if desired/to your taste, mash slightly with a fork, let cool to room temperature, and serve with vanilla ice cream or Greek yogurt. Keeps in the refrigerator for 3-4 days.
