Roasted semolina soup

Ingredients for 4 servings:

  • 3 tbsp semolina (durum wheat semolina)
  • 1 tbsp butter
  • 1 liter of broth
  • some oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Melt the butter with a dash of oil in a saucepan, then toast the semolina until it turns dark brown. Deglaze with the broth and simmer for about 15 minutes. Be careful, the semolina will smoke while toasting. Don’t deglaze with the broth too quickly; the darker the semolina, the nuttier the soup’s flavor.
