Roasted tomatoes with cane sugar and balsamic vinegar

Ingredients for 4 servings:

  • 2 kg tomatoes
  • 6 tbsp brown cane sugar
  • 75 ml balsamic vinegar
  • 1 bunch of basil
  • 25 ml olive oil
  • black pepper
  • Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dice the tomatoes, peeling them first if necessary, and removing the seeds. Season the diced tomatoes with salt and pepper and fry them in olive oil for about 1 minute. Sprinkle with brown sugar and then deglaze with the balsamic vinegar. Remove from the heat and stir in the chopped basil. Cooking time varies depending on the firmness of the tomatoes. This dish pairs perfectly with almost any meat dish, especially dark meat.
