Ingredients for 2 servings:
- 1 can/n white beans
- 2 large tomatoes
- 1 large bell pepper(s)
- 2 m.-sized onion(s)
- 1 pack of feta cheese, optional
- 2 tbsp olive oil for frying
- salt and pepper
- lemon juice
- possibly spice(s), Mediterranean
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Dice the onions and finely chop the tomatoes and bell peppers. Heat a pan with olive oil. First, fry the onions until golden brown, then add the tomatoes and bell peppers and fry for about 5 minutes. Finally, add the drained white beans and, if desired, crumble the feta cheese over the pan of vegetables. If desired, you can refine the dish with Mediterranean spices, pepper, salt, and a dash of lemon juice. Serve with ciabatta or pita bread.
