Roasting nuts – the benefits
Nuts are generally healthy food.

Roasting nuts – the disadvantages
Vitamins do not tolerate heat.

- The unsaturated fatty acids are only partly lost through roasting, but free radicals are formed from them.
- The free radicals in turn form oxidation degradation products.
- However, these breakdown products are also formed if you store the nuts for a long time.
