Ingredients for 6 servings:

  • 1 ½ kg pork (collar)
  • 2 tbsp mustard
  • 2 tbsp tomato ketchup
  • salt and pepper
  • n. B. onion(s)
  • n. B. garlic
  • Paprika powder
  • 1 cup water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut a 2cm-slice opening into the top of the pork neck, ensuring the individual slices are still connected. Mix together a robust seasoning mix of mustard, ketchup, salt, pepper, and paprika and spread it into the resulting spaces. Then place 1-2 slices of onion and, if you like, garlic into each space. Feel free to spread the remaining seasoning mix over the roast. Then place it in a roasting bag (or a covered pan) with 1 cup of water and cook in the oven at 200°C (400°F) for about 2 hours. Finally, let it crisp up for another 30 minutes without the roasting bag or pan lid. It tastes great with bread, but also with potatoes and vegetables. Ideal for parties, as the roast stays warm for a long time, and it only gets better with time in the oven.
