Romaine lettuce with garlic and herb dressing

Ingredients for 2 servings:

  • 1 romaine lettuce
  • 2 large spring onions
  • 100 g mushrooms, fresh
  • 90 g Roma tomatoes
  • 1 garlic clove(s)
  • 2 tbsp raspberry vinegar
  • 1 tsp mustard, sweet
  • 1 tsp honey
  • ½ tsp herbal salt, coarse
  • 3 pinches of ground pepper
  • 2 tbsp rapeseed oil
  • 1 handful of herbs (lovage, oregano, marjoram, chives)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the romaine lettuce and drain well. Finely chop the spring onions, clean the mushrooms with a brush and slice them, and halve the tomatoes. For the dressing, mix the raspberry vinegar, mustard, herb salt, pepper, honey, and rapeseed oil well. Peel the garlic clove and press it in. Wash the herbs, shake dry, and finely chop them. Place the romaine lettuce in a bowl, add the mushrooms, spring onions, and tomatoes. Drizzle with the dressing and sprinkle with the herbs.
