Colorful lamb's lettuce with feta

Ingredients for 4 servings:

  • 300 g lamb’s lettuce
  • 2 tomatoes
  • 1 onion(s)
  • 2 carrots
  • 400 g mushrooms
  • 100 g feta cheese
  • 2 tbsp olive oil
  • 4 tbsp balsamic vinegar
  • salt and pepper
  • 1 tsp honey
  • 1 tsp mustard
  • some lemon juice (alternatively orange juice)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the lamb’s lettuce thoroughly. Peel the onion and tomatoes. Finely dice both and add to the salad. Peel and thinly slice the carrots, then dice the feta. Add to the salad. Trim the mushrooms, sauté them in a pan with a little olive oil, and while still warm, add them to the remaining ingredients. Mix together a sauce of balsamic vinegar, olive oil, salt, pepper, a little mustard, and honey, and season with a little lemon or orange juice. Arrange the salad on plates, drizzle with the dressing, and serve.
