Ingredients for 2 servings:

  • 300 g minced meat, lean
  • 100 g zucchini
  • 100 g kidney beans
  • 100 g cucumber(s)
  • 100 g corn
  • 200 g arugula
  • 5 ml nut oil (macadamia oil)
  • salt and pepper
  • possibly curry powder
  • Parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Low-carb, high-protein, perfect for dinner. High-quality fats. Plenty of vegetables, high in fiber. Ideal in summer. Light and easy to prepare.

Brown the minced meat in a pan. Meanwhile, slice or dice the zucchini and cucumber. Just before the meat is cooked, add the corn, kidney beans, zucchini, cucumber, and arugula. Cover the pan and let it stand on low heat for 5-10 minutes. Season to taste with salt, pepper, and curry powder, if desired. Then arrange the casserole on plates, sprinkle with chopped parsley, and drizzle with macadamia oil.
