Ingredients for 4 servings:

- 1 Romanesco
- ½ celery root
- oil
- 800 ml vegetable stock
- salt and pepper
- curry
- Paprika powder
- Parsley
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Peel and dice the onion and celery. Separate the Romanesco into florets and wash. Sauté the onion in oil until translucent, then add the Romanesco and celery and cook for a few minutes. Deglaze with vegetable stock. Season with salt, pepper, curry powder, and paprika. Simmer over low heat for about 20 minutes. Add the parsley halfway through. Then purée the soup and season to taste.
