Ingredients for 4 servings:
- 200 g flour (Ruchmehl), type 1050
- ½ tsp sea salt
- 60 g butter, cold
- 150 g quark (low-fat quark)
- 2 eggs
- 2 ½ dl cream
- Salt and pepper from the mill
- Nutmeg, freshly grated
- 700 g jacket potatoes from the previous day
- 200 g peas, fresh or frozen
- 1 small onion(s), finely chopped
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Mix flour and salt in a bowl. Cut cold butter into small pieces and rub it into crumbs with the flour between your fingers. Add the quark and quickly combine to form a dough; do not knead. Cover and chill for at least 30 minutes. Whisk together the eggs and cream, season with salt, pepper, and nutmeg. Peel the potatoes and grate them finely. Add the peas and onions, mix well, and let stand for 5 to 10 minutes. Roll out the dough and place it in the greased dish. Spread the potato mixture on top. Bake the rösti tart in the center of a preheated oven at 150°C for 35 to 40 minutes.
