  • 2 kg potatoes
  • 250 g bacon, diced
  • 250 g salami, Salsiz or Langjäger
  • 5 dl milk
  • 2 tbsp flour
  • 2 tbsp corn, coarsely ground (Bramato, Polenta)
  • Salt, from the mill

Graubünden potato cake

Peel the potatoes and grate them. Mix them with the bacon bits and sliced ​​sausage. Mix the milk with the flour and cornstarch and add to the potatoes. Season the mixture with a little salt (sausage is quite spicy) and plenty of pepper. Spread the potato mixture on a well-oiled tart pan and bake in a preheated oven at 180°C (350°F) on the lowest rack for about 1 hour.
