Rouilles sorrel soup

Ingredients for 3 servings:

  • 4 handfuls of sorrel
  • 1 onion(s) or shallot(s)
  • 1 tbsp flour
  • 50 ml white wine or apple cider vinegar
  • 1 liter vegetable broth
  • 6 potatoes or bread cubes / oat flakes
  • 2 tbsp crème fraîche
  • Butter or oil
  • possibly flowers (daisies)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the sorrel. Fry the onion or shallot in butter or a little oil until translucent. Add the sorrel, dust with flour, and deglaze with a splash of white wine or apple cider vinegar. Add the stock. Add diced potatoes, if desired. Simmer for about 15-20 minutes. Finally, add the crème fraîche. For the version without potatoes, top with toasted breadcrumbs or oatmeal. Garnish with some flowers, if desired.
