Ingredients for 4 servings:

  • 4 beef roulades
  • Mustard
  • 400 g minced meat
  • 5 onions, finely chopped
  • 2 tbsp clarified butter
  • 3 grains of allspice
  • cornstarch
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pepper the roulades, brush with mustard, spread the minced meat on the roulades, sprinkle with 2 chopped onions, roll up, and tie with string. Sear the roulades in hot clarified butter in a casserole dish. Deglaze with a little water, add the onions and allspice, and simmer covered for about 1.5 hours, basting frequently with a little water and turning. Remove the meat from the sauce, loosen the strings, bring the stock to a boil, thicken lightly with cornstarch, and season generously with salt and pepper. Serve with red cabbage, Brussels sprouts, baked cauliflower, or chanterelle mushrooms and potatoes as a side dish.
