Ingredients for 4 servings:
- 225 g mayonnaise
- 1 tbsp lemon juice
- 4 anchovies
- 3 tsp mustard (Dijon mustard)
- 4 slices of toast
- 280 g bacon
- 480 g chicken breast fillet(s)
- 6 spring onions
- 1 head of lettuce
- 80 g Parmesan
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Finely chop the anchovies and mix them with mayonnaise, lemon juice, mustard, and 1 tablespoon of water to make a dressing. I put everything in the blender for a while to ensure that no anchovy pieces are visible in the dressing. Cut the slices of bread into 2 cm cubes and toss with a little oil. Then fry them until crispy croutons. Fry the bacon until crispy. Cut the chicken breast into strips, season with salt and pepper, and quickly fry until crispy all over. Slice the spring onions into rings. Mix half of the onions and the meat with the dressing. Wash and shred the lettuce and toss with the dressing. Sprinkle the bacon, croutons, and the remaining onion rings over the salad. Finally, grate the Parmesan cheese over the salad.
