Roulades with apple and herb filling

Ingredients for 4 servings:

  • 4 beef roulades
  • 4 apples
  • 2 onions, red
  • 4 slice(s) ham, cooked
  • 1 bunch of parsley
  • 500 g tomatoes
  • ¼ liter meat broth
  • 1 tbsp crème fraîche
  • 1 pinch(s) of sugar
  • salt and pepper
  • Clarified butter, for frying

Fresh beef roulades

Season the roulades with salt and pepper. Core the apples and cut into thin slices. Peel and finely chop the onions. Chop the washed parsley. Cover the roulades with the ham, arrange a few apple slices, diced onions, and parsley on top. Roll up the roulades and secure them or tie them with kitchen string. Brown the roulades on all sides in clarified butter, quarter the tomatoes, and add them to the roulades along with the remaining apples and onions. Pour in the hot stock and simmer until the roulades are tender (about 40 minutes). Remove the meat, purée the sauce or strain it through a sieve, stir in the crème fraîche, and season with salt, pepper, and sugar.
