Rösti with Salmon Tartar and Cucumber Cream

The perfect rösti with salmon tartar and cucumber cream recipe with a picture and simple step-by-step instructions.

  • 500 g Potatoes, waxy
  • 0,5 Pc. Cucumber
  • 200 g Smoked salmon
  • 200 g Quark
  • 3 El Cream
  • 2 Pc. Limes
  • 0,5 bunch Parsley smooth
  • 2 Pc. Egg
  • 2 Pc. Dried chilli
  • 2 Pc. Clarified butter
  1. Peel, roughly grate and squeeze the potatoes. Let the liquid stand for a moment, carefully pour off and add the starch back to the potatoes. Then add the eggs and season with salt and pepper. Heat 2-3 tablespoons of clarified butter in a pan, add the potato mixture and cook on both sides for about 20-25 minutes.
  2. Finely grate the cucumber, mix with the quark and cream and season with salt, pepper, chilli, juice of a lime, olive oil and sugar.
  3. Cut the salmon into fine cubes and season with the juice and zest of the lime, chopped parsley, salt and pepper.
  4. Place the finished hash browns on kitchen paper and then serve on a large plate with the cucumber cream and salmon tartare.
