Rösti with Salmon Tartar and Cucumber Cream

- 500 g Potatoes, waxy
- 0,5 Pc. Cucumber
- 200 g Smoked salmon
- 200 g Quark
- 3 El Cream
- 2 Pc. Limes
- 0,5 bunch Parsley smooth
- 2 Pc. Egg
- 2 Pc. Dried chilli
- 2 Pc. Clarified butter
- Peel, roughly grate and squeeze the potatoes. Let the liquid stand for a moment, carefully pour off and add the starch back to the potatoes. Then add the eggs and season with salt and pepper. Heat 2-3 tablespoons of clarified butter in a pan, add the potato mixture and cook on both sides for about 20-25 minutes.
- Finely grate the cucumber, mix with the quark and cream and season with salt, pepper, chilli, juice of a lime, olive oil and sugar.
- Cut the salmon into fine cubes and season with the juice and zest of the lime, chopped parsley, salt and pepper.
- Place the finished hash browns on kitchen paper and then serve on a large plate with the cucumber cream and salmon tartare.
