Rum-Grape-Nut Cookies

Ingredients for 1 servings:

  • 60 g wheat flour
  • 60 g whole wheat flour
  • 40 g cocoa powder
  • 150 g butter
  • 1 egg(s)
  • 2 tbsp rum, optional
  • 130 g cane sugar
  • 1 sachet of vanilla sugar
  • 100 g chopped nuts, e.g. almonds, hazelnuts, walnuts, to taste
  • 120 g raisins, small
  • 150 g chocolate, e.g. milk and/or dark chocolate
  • 1 tsp baking powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 42 minutes

Makes about 3 baking trays of cookies depending on size

Weigh all ingredients and set aside. Roughly chop the chocolate, halving the raisins if they are too large. Cream the butter with the sugar and vanilla sugar until light and fluffy. Add the egg and rum, if using, and mix in. Mix the baking powder with the flour. Add the dry ingredients to the egg mixture and mix well. This should form a firm dough. Use a teaspoon to place small heaps on a baking sheet and press down with wet fingers. The cookies can be placed a little apart on the baking sheet as they do not rise much. Bake in an oven preheated to 175°C (convection oven) for approx. 10-13 minutes. Do not let them get too dark, otherwise the cookies will become bitter. Makes approx. 3 baking trays of cookies, depending on the desired size.
