Russian minced meat stew

Ingredients for 6 servings:

  • 2 large onions
  • 3 tbsp oil
  • 800 g minced beef
  • 2 stalk(s) leeks
  • 1 package of tomatoes, pureed
  • 250 ml meat broth
  • 1 tsp mustard
  • 1 tsp paprika powder, mild
  • salt and pepper
  • 450 g sour cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and dice the onions. Heat oil in a frying pan and sauté the onions. Increase the heat, add the minced meat to the pan, and fry, stirring constantly, until lightly browned and crumbly. Trim the leek and slice it into rings. Add it to the minced meat along with the passata, meat broth, mustard, and seasoning, and bring everything to a boil. Cook over low heat for about 15 minutes, stirring frequently. Season to taste. Stir in the sour cream just before serving. This stew is very easy to make ahead. It can also be frozen, but in this case, the sour cream should not be stirred in yet.
