Ingredients for 4 servings:

  • 500 g pasta (spaghetti)
  • 2 tbsp olive oil
  • 170 g bacon (pancetta), cut into strips, diced
  • 1 onion(s), finely diced
  • some celeriac, diced
  • 1 carrot(s), diced
  • 3 clove(s) garlic, chopped
  • 2 red chili peppers, chopped
  • 2 tbsp tomato paste
  • 350 ml tomato juice
  • 1 bunch basil, cut into strips
  • Parmesan, grated
  • Salt
  • pepper
  • Sugar

Working time approx. 20 minutes; Total time approx. 20 minutes

SABO’s – Spaghetti in tomato bacon sauce

Heat olive oil in a deep pan and fry the pancetta or bacon for a few minutes. Add the onions, carrots, and celery and sauté for 3-4 minutes. Sprinkle in the garlic and chili. Stir in the tomato paste and let it caramelize slightly. Pour in the tomato juice and simmer for about 12-15 minutes. Season the sauce to taste. Cook the spaghetti until al dente, drain well, and let it simmer in the sauce for 1-2 minutes. Mix the basil and Parmesan cheese together. Sprinkle the spaghetti with the basil/Parmesan mixture before serving.
