Saddle of Pork Steak with Porcini Mushroom Sauce, Cauliflower and New Potatoes
The perfect saddle of pork steak with porcini mushroom sauce, cauliflower and new potatoes recipe with a picture and simple step-by-step instructions.
Pork loin steak:
- 400 g 4 marinierte Schweinerückensteaks

Porcini mushroom sauce.

- 1 powerful splash Lemon juice
Cauliflower:
- 780 g 1 Blumenkohl / in Röschen geputzt
- 1 tsp Salt
- Clove of garlic
- 1 tsp Vegetable broth
Serve:

- 1000 g New potatoes
- 1 tsp Salt
- 1 tsp Ground turmeric
- 1 tsp Whole caraway seeds
Pork loin steak:
- Shortly before serving, fry the pork loin steaks in a grill pan with sunflower oil (2 tbsp) on both sides until golden-brown and season with coarse sea salt from the mill (4 big pinches).
Porcini mushroom sauce:
- Peel the onion and dice finely. Heat butter (2 tbsp) and sunflower oil (1 tbsp) in a pan, add the onion cubes and fry / stir-fry. Add the frozen porcini mushrooms, sauté / stir-fry and deglaze / pour in the cooking cream (200 g) and vegetable stock (200 ml / 1 teaspoon instant stock). With coarse sea salt from the mill (4 big pinches), colored pepper from the mill (4 big pinches), sugar (1 big pinch); Season glutamate (1 teaspoon / alternatively 1 teaspoon instant chicken stock) and lemon juice (1 strong splash). Let everything simmer / reduce.
Cauliflower:
- Clean the cauliflower, cut into florets and place in a steamer insert. Season the water for the steamer insert with 1 tuber of chopped garlic, 1 teaspoon of salt and 1 teaspoon of vegetable stock. Steam the cauliflower for about 20-25 minutes, remove it, place it on a fire-proof dish, cover with flakes of butter (2 tbsp) and season with coarse sea salt from the mill (2 big pinches) and everything in the oven at 50 ° C keep warm until serving.
New potatoes:
- Peel and wash the potatoes, in salted water (1 teaspoon salt), ground with turmeric (1 teaspoon) and whole caraway seeds (1 teaspoon), cook for about 20 minutes and drain.
Serve:
- Serve pork saddle steak with porcini mushroom sauce, cauliflower and potatoes, each garnished with half a tomato and ¼ kiwi.
