Sage gnocchi with green asparagus

Ingredients for 2 servings:

  • 750 g asparagus, green
  • 1 organic lemon(s)
  • 3 sprigs sage
  • 500 g gnocchi, homemade or ready-made product
  • 2 tbsp clarified butter
  • salt and pepper
  • 30 g Parmesan, shaved

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Prepare the asparagus and cut it in half or thirds, depending on its length. Grate the zest and juice the lemon. Wash the sage and roughly chop the leaves, reserving some for garnishing. Cook the gnocchi in salted water until tender, then drain. Meanwhile, fry the asparagus in 1 tablespoon of clarified butter for about 5 minutes, turning occasionally. Season with salt and pepper, then remove from the pan. Add the gnocchi to the pan with another tablespoon of clarified butter and fry on all sides, then add the sage. Add the asparagus, lemon zest, and lemon juice to the pan, mix everything together, and season to taste. Serve and garnish with Parmesan shavings and a little sage. As a starter, this recipe serves 4-6 people.
