Ingredients for 3 servings:

  • 450 g noodles (rice noodles
  • 2 large onions
  • 4 garlic cloves
  • 2 tbsp ginger, pickled
  • 2 tbsp lemongrass, chopped
  • 2 tbsp chili oil
  • 250 ml chicken stock
  • 4 tbsp chili sauce
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce (Nuoc Nam or Chinese oyster sauce)
  • 2 tbsp brown sugar
  • 1 bunch of basil
  • 1 ½ tbsp cornstarch

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the onions and garlic, drain and chop the ginger. Stir-fry the onions, garlic, ginger, lemongrass, and chili oil in a wok for 2-3 minutes. Add the chicken stock, chili sauce, fish sauce, soy sauce, and sugar and simmer for 2-3 minutes. Finely slice the basil, add it to the sauce, and cook for 1-2 minutes. Mix the cornstarch powder with cold water to thicken the sauce. Cook the noodles according to the package instructions and toss with the sauce.
