Ingredients

* for the dressing

  • 0,5 Cucumber
  • 8 Cherry tomatoes
  • 1 Red Onion
  • 1 Red pointed peppers
  • 0,5 Sweet corn canned drained
  • 250 g Feta
  • 200 g Yogurt
  • 1,5 tbsp Mustard
  • 1 tbsp Tomato ketchup
  • 1 tsp Pomegranate syrup
  • 2 tbsp Chopped parsley
  • 0,5 Solo garlic
  • Salt
  • Pepper

Instructions

  • Put the lettuce leaves in a colander, rinse and drain, then tear apart the large leaves and place in a bowl.
  • Peel the cucumber, quarter it lengthways and cut into small pieces. Wash tomatoes, rub dry, then halve or quarter lengthways. Peel and chop the onion. Wash or peel the peppers, remove the seeds and membranes and cut into small pieces. Cut the feta into cubes.
  • Add the cucumber, tomato, onion, bell pepper, corn and feta to the bowl and mix with the lettuce leaves.
  • For the dressing, peel the garlic and cut into very small pieces. Mix all of the above ingredients together and let them steep in the refrigerator for a while. (I made the dressing first so that it had enough time to steep.)
  • Place the salad with the dressing on a plate and serve.
