Salad with goat cheese and ham rolls

Ingredients for 4 servings:

  • 4 pieces goat’s cheese, round
  • 8 slices of ham (Serrano)
  • 200 g grapes, white and blue
  • 4 cl grappa
  • 4 cl rum, brown
  • Lettuce (Frisee, Lamb’s Lettuce, Lollo Rosso, Romaine Lettuce)
  • 4 tbsp balsamic vinegar (aged)
  • 4 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper from the mill
  • Olive oil for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Halve the grapes, remove the seeds, and marinate in grappa and rum for 1 hour. Wash the various lettuces in ice water, spin dry, cut into fairly small pieces, toss, and arrange on plates. Mix the balsamic vinegar, olive oil, and lemon juice with a fork to make a dressing, season with salt and pepper, and drizzle over the salad. Halve the round goat’s cheese slices, press them into an even shape, and wrap each one in a slice of ham, making sure all sides are covered. Secure the ham with toothpicks. Carefully fry the rolls briefly in a little olive oil until the fat in the ham becomes translucent and the cheese is slightly warmed. If they stay in the pan too long, the cheese will melt and run out! Place two finished rolls on each salad, drain the marinated grapes, arrange them around the slices, and serve.
