Salad with Kohlrabi – Three Delicious Recipes

Salad with kohlrabi is not only delicious but also healthy. It is low in calories and provides a lot of vitamin C, calcium and magnesium. Here you will find three easy and quick recipes for kohlrabi salad, which are also suitable for vegans or vegetarians.

Salad with kohlrabi, yoghurt and garlic

Ingredients for 4 servings: 3 kohlrabies, 200 g yoghurt (vegan alternative: soy yoghurt), 4 cloves of garlic, 1 tbsp lemon juice, 1 small bunch of dill, 1-2 tbsp olive oil.

Preparation:

  • Peel, wash and coarsely grate the kohlrabi.
  • Wash, peel and finely chop the garlic. Wash and finely chop the dill.
  • Mix all the ingredients except for the swedes to make a dressing. If you want to avoid fats, you can skip olive oil.
  • Pour the dressing over the salad and mix well. Taste, adding a little salt if necessary.

Raw vegetable salad with kohlrabi

Ingredients for 2 servings: 2 small kohlrabi, 1 apple, 1 carrot, 1 slice of celery, 1/2 bell pepper, olives, olive oil, lemon juice, salt, pepper, fresh dill or fresh parsley leaves.

Preparation:

  • Peel and wash the vegetables. Roughly grate or slice the peppers.
  • Mix the vegetables with the other ingredients. The amount of the other ingredients (olives, salt, etc.) depends on your taste.

Salad with kohlrabi and beetroot

Ingredients for 2 servings: 1 kohlrabi, 1 large beetroot, 1 pointed pepper, 15 pitted olives, 3 tablespoons pumpkin seeds, 1 bunch of dill, lemon juice, and olive oil.

Preparation:

  • Peel, wash and coarsely grate the kohlrabi and beetroot. Wash and dice the peppers. Slice the olives. Wash and finely chop the dill. Finely chop or grind the pumpkin seeds.
  • Mix all ingredients. Add olive oil, lemon juice, pepper and salt to taste.
