Salmon casserole with mashed potatoes

Ingredients for 3 servings:

  • 500 g salmon
  • 900 g mashed potatoes
  • 200 ml milk
  • 3 tsp butter
  • 1 stalk(s) leek
  • 2 carrots
  • ½ lemon(s), juice and zest
  • 200 ml breadcrumbs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mix the finished mashed potatoes with the milk and 2 teaspoons of butter. Wash and dry the salmon if necessary, and fry briefly while still slightly raw. Cut the carrots into sticks and the leek into rings. Fry them with the lemon juice and zest in 1 teaspoon of butter; the carrots should still be al dente. Place the salmon in a baking dish. Add the vegetables and cover with the mashed potatoes. Sprinkle the breadcrumbs over the mashed potatoes. Bake in a preheated oven at 200°C (400°F) for about 15 minutes, until the breadcrumbs are browned. Serve with a green salad.
