Crispy fried potatoes with creamed herring

Ingredients for 4 servings:

  • 1 ¼ kg potatoes or
  • 2 packs of potatoes (fried potatoes) from the refrigerated section
  • some germ oil
  • 2 medium-sized onions, finely diced
  • 125 g ham, diced
  • some salt and pepper
  • Paprika powder
  • 2 packs of fish fillet(s) (cream herring fillets)
  • 4 eggs, hard-boiled
  • n. B. Pickled gherkin(s)
  • n. B. Beetroot salad
  • some parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the raw potatoes and cut into thin slices. Heat oil in a covered pan, then reduce heat to medium. Add the potato slices to the pan and cover. Remove the lid after about 15 minutes. Turn the potatoes over, cover, and cook for another 5 to 10 minutes. Once the potatoes are tender, add the finely diced onion and ham, and continue to fry uncovered at a higher temperature, turning frequently, until crispy. Add more oil as needed and season to taste. If using fried potatoes from the refrigerated section, prepare them according to the package instructions. Arrange the golden-brown fried potatoes on plates with the creamed herring. Serve with hard-boiled egg quarters, gherkins, beetroot, and a little parsley, if desired.
