Salmon fillet in dill and ginger sauce

Ingredients for 2 servings:

  • 2 salmon fillets, 180g each
  • 6 sprigs of dill
  • 1 bay leaf
  • 2 cloves
  • 6 grains black pepper
  • 2 tbsp vinegar (white wine vinegar)
  • 1 tbsp mustard (Dijon mustard)
  • ½ tbsp ginger, grated
  • 1 tbsp shallot(s), diced
  • ½ tsp garlic, finely chopped
  • 1 tbsp vinegar (tarragon vinegar)
  • 20 g chili pepper(s), diced
  • 60 ml olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the mustard, ginger, diced shallots, garlic, tarragon vinegar, and chili. Stir in the olive oil and season with salt and pepper. Place the salmon fillets in a shallow pan and cover with water. Add the dill, bay leaves, cloves, peppercorns, vinegar, and a pinch of salt. Bring to a boil and let the salmon simmer for about 5 minutes. Drain and serve with the sauce. Serve with rice.
