Marinated herring in buttermilk

Ingredients for 4 servings:

  • 1 kg salted herring
  • 4 onions
  • ½ jar of pickled gherkins (or 3-4 pickled gherkins)
  • 1 tsp mustard seeds
  • 1 tbsp oil
  • 1 bay leaf
  • 3 grains of allspice
  • 1 tsp white pepper
  • 1 liter buttermilk
  • Vinegar or pickle solution if needed

Instructions

Working time approx. 1 hour; Rest time approx. 12 hours; Total time approx. 13 hours

Soak the herring well overnight, then fillet it. Remove the skin for flavor. Place the fillets in a sealable container (a bowl with a lid). Slice the onions into rings, cut the cucumber into small pieces, and add them to the herring fillets. Add all the spices and finally pour chilled buttermilk over everything. Let the dish sit in the refrigerator for at least 12 hours. Then season to taste and add more vinegar, or even better, cucumber broth. We serve it with boiled potatoes.
