Salmon fillet with pea puree

Ingredients for 4 servings:

  • 1 onion(s)
  • 250 g peas, frozen
  • 500 ml water
  • 100 ml whipped cream
  • 4 salmon fillets, fresh or frozen
  • 60 g mashed potato powder
  • butter
  • n. B. Oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Dice the onion and sauté in a pan with oil until translucent. Add the peas (still frozen) and sauté for about 2 minutes. Pour in 500 ml water and 100 ml heavy cream, season with salt and pepper, and bring to a boil. Cook for 10 minutes over medium heat. Then finely puree the peas with a food processor. Remove the pan from the heat and stir in the mashed potato powder. If the 60 g isn’t sufficient, add more mashed potato powder as needed. Stir in 1 tablespoon of butter and adjust the seasoning if necessary. Meanwhile, heat the oil in another pan and fry the seasoned fish.
