Ingredients for 2 servings:
- 1 small onion(s) or shallot
- 1 tbsp oil, e.g. wheat germ or safflower oil
- 1 small kohlrabi
- 200 ml vegetable stock or salt water
- 200 ml cream
- 1 tbsp mustard
- some lime juice
- 1 tbsp chives, chopped, preferably fresh
- 1 pinch(s) of sugar
- 2 salmon fillets
- 1 tbsp oil
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Peel and dice the onions. Peel and dice the kohlrabi. Sauté the onions in oil. Add the kohlrabi and sauté briefly. Pour in the broth and simmer for about 10 minutes, until tender. Add the cream, mustard, sugar, lime juice, and chives, and season with salt and pepper. Meanwhile, season the salmon fillet with salt and pepper to taste and fry in oil. First, pour the kohlrabi sauce onto plates and place the salmon fillet on top.
