Salmon fillet with spinach

Ingredients for 4 servings:

  • 600 g spinach
  • 1 bag of croquettes (oven croquettes, 750 g), frozen
  • 500 g salmon fillet(s) (frozen)
  • 1 pot of chives
  • 1 pot of parsley
  • 3 lemons
  • 4 tbsp oil
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 200°C. Bake the croquettes for 15-18 minutes until crispy. Prepare the spinach according to the package instructions and keep warm. Squeeze half a lemon. Thaw the salmon, rinse, pat dry, and drizzle with lemon juice on both sides. Season with salt and pepper. Heat oil in a pan and fry the salmon fillets for 3-4 minutes on each side. Cut the remaining lemons into wedges. Arrange a salmon fillet and two spoonfuls of spinach on each plate. Garnish with lemon, chives, and parsley. Fried potatoes are also delicious instead of oven-baked croquettes. A glass of white wine, such as Semillon Chardonnay, goes particularly well with this dish.
