Ingredients for 2 servings:
- 400 g salmon fillet(s)
- Salt and pepper, white
- ½ bunch dill, only the tips
- 1 tsp mustard (Dijon mustard)
- 2 tsp mustard (Pommery mustard)
- 1 tsp horseradish, grated
- 1 egg yolk
- breadcrumbs
- Clarified butter
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the salmon fillet into approximately 3 cm wide strips and season with salt and pepper. Wash, dry, and finely chop the dill. Combine both types of mustard with horseradish and egg yolk, then stir in the dill. Dip the salmon strips into the mustard mixture. Then coat them all over in the breadcrumbs and carefully press the coating into the crust. Heat a generous amount of clarified butter in a deep pan and fry the salmon until golden brown all over. Do not overcook, so the fish stays moist. Briefly degrease the salmon on a thick layer of kitchen paper. Serve with a dip of seasoned sour cream, boiled potatoes, and mixed leaf salad.
