Banana waffles

Ingredients for 1 servings:

  • 50 g butter or margarine
  • 70 g cane sugar (raw), can be completely replaced with honey
  • ½ vanilla pod(s)
  • 3 eggs
  • 2 tbsp yogurt
  • 200 g wheat flour, 550 to wholemeal
  • 1 tsp baking powder
  • 50 g ground almonds
  • 50 ml mineral water, sparkling
  • 3 banana(s), ripe

Cream the butter or margarine with the sugar or honey until fluffy. Combine the flour with the baking powder and almonds and stir in alternately with the eggs and yogurt. Then stir in the mineral water. Mash the bananas thoroughly with a fork, beat until smooth, then add to the batter and incorporate. Bake in the preheated waffle iron as usual. The waffles won’t be crispy and won’t be dry or hard after cooling, which is good if you don’t have many teeth yet. These waffles also sold like hotcakes in the preschool group, but they’re also a hit with adults—as long as they like bananas. I tried to use as little (refined) sugar as possible with my toddler children and rely more on honey, which (if there are no allergies) isn’t a problem with foods that are heated.
