Salmon pralines with honey and dill sauce

Ingredients for 4 servings:

  • 4 slice(s) salmon, smoked or gravlax (medium slices, thinly sliced)
  • 100 g cream cheese
  • 40 g horseradish (creamed horseradish)
  • 1 tsp lemon juice
  • Salt and pepper, to taste
  • 6 sprigs of dill (fresh)
  • 50 g honey, liquid
  • 50 g mustard, medium hot

Spread the salmon on a board and cut the slices in half crosswise. Mix the cream cheese, horseradish, lemon juice, and a pinch of salt and pepper together, form small balls, and place them in the center of the salmon slices. Roll the salmon slices into balls around the salmon slices and place them on appetizer spoons or small plates (seam at the bottom). Finely chop the dill (leaving 8 small sprigs for decoration), mix with runny honey and mustard. Place a dollop of sauce on each salmon praline, allowing it to drip down a little on all sides. Decorate each with a sprig of dill. Serve with toasted wedges or baguette.
