Salmon with fried egg and panko omelette

Ingredients for 1 servings:

  • 100 g salmon fillet(s), very good quality
  • 1 tsp seasoning salt for fried fish
  • 1 sprig of dill
  • 2 stalks of chives
  • 1 lime(s)
  • 2 m.-sized eggs
  • 1 tbsp flour
  • 3 tbsp panko
  • salt and pepper
  • 1 tbsp rapeseed oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Season the salmon on both sides with fish seasoning and dill. Drizzle with the juice of half a lime. Slice the rest of the lime. Beat an egg until frothy and season with a pinch of pepper and salt. Coat the salmon first in flour, then in the egg, and finally in the panko. Heat a pan with rapeseed oil and fry the salmon on both sides until golden brown. Meanwhile, heat a second pan with rapeseed oil and cook a fried egg. Mix the rest of the beaten egg and the rest of the panko together and let it set in the pan with the salmon. Arrange the salmon with the lime slices, the panko omelet, the fried egg, and the chives and serve.
