Salmon with mushrooms and nuts

Ingredients for 4 servings:

  • 800 g salmon fillet(s)
  • 2 tbsp margarine
  • 4 m.-sized potatoes
  • 500 g mushrooms
  • 2 tbsp walnuts, coarsely chopped
  • 2 tsp thyme
  • 100 ml oil (walnut oil)
  • 200 ml fish stock
  • 2 tbsp butter
  • Salt and pepper, coarsely ground
  • butter and parsley, if desired, for garnishing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Lacs with soup and nuts

Peel and dice the potatoes. Trim and finely chop the mushrooms. Sauté both in walnut oil. Then add the walnuts and stock and cook until the potatoes are tender. Stir in the butter and season with salt and pepper. Fry the salmon fillets and season with salt and pepper. Serve with a salad. If you like, drizzle a little melted butter and a sprinkle of fresh parsley over the salmon.
