Salt and Caramel Ice Cream with Cream Puffs and Curd Cheese

The perfect salt and caramel ice cream with cream puffs and curd cheese recipe with a picture and simple step-by-step instructions.

Ice cream and orange sauce:

  • 250 g Sugar brown
  • 50 g Maple syrup
  • 50 g Butter
  • 0,5 Pc. Vanilla pod
  • 2 packet Cream stiffener
  • 1 tsp Salt
  • 100 ml Milk
  • 500 ml Cream
  • 4 Pc. Eggs
  • 3 Pc. Oranges
  • 2 tsp Food starch
  • 2 Pr Pepper
  • 4 tbsp Sugar
  • 1 Pr Salt

Cream puff:

  • 250 ml Water
  • 50 g Butter
  • 1 Pr Salt
  • 150 g Flour
  • 4 Pc. Eggs
  • 400 ml Cream
  • 1 tbsp Sugar
  • 2 packet Vanilla sugar brown
  • 2 packet Cream stiffener
  • Powdered sugar

Creamy quark:

  • 500 g Quark
  • 1 cups Whipped cream
  • 1 cups Sour cream
  • 150 g Sugar
  • 1 packet Vanilla sugar
  • 1 Glass Cherries

Salt and caramel ice cream with orange sauce:

  1. Put the brown sugar, butter, vanilla pod and maple syrup in a bowl and stir. Add the salt, milk and cream. Then stir everything again.
  2. Finally add the eggs and the cream stiffener. Now mix all components well for approx. 4-5 minutes. Pour the creamy mass into a pre-chilled bowl and place in the freezer.
  3. Mix again after approx. 4-5 hours. After another 5 hours the ice cream is perfect.
  4. For the orange sauce, squeeze the oranges and simmer the juice together with the sugar. Then add the salt, pepper and cornstarch. The sauce can be a little firmer.
  5. Bring the water with the butter and a pinch of salt to the boil. Add the 150 g flour. After the flour has been stirred in, let the mixture cool down first.
  6. Tip the cream puff pastry onto a baking sheet lined with baking paper. Bake at 220 ° C for about 30 minutes and put a bowl of water in the oven so that the cream puffs rise better.
  7. Mix all ingredients for the cream with a mixer and put the cream in a piping bag. Now put the cream on the lower part of the cream puff and put the upper part of the cream puff on top. Then put in a cool place.

Creamy quark:

  1. Put all ingredients except the cherries in a mixing bowl and mix together. Drain the cherries if necessary. Layer the quark and cherries in a jar.
